One of the perks of running a 5K is that they usually have snacks and things for the runners after they finish! In the case of Foam Fest, they had granola bars, bananas, and Mike’s Hard Lemonades. Since I’m not 21 and not allowed to do the whole Mike’s Hard thing, I justified taking lots and lots of bananas. 😀
Since then, the bananas have ripened past the point of consumption (for me, anyway). For the last few days, I’d look at them and think “banana bread soon?!”.
Each banana bread waffle look a little more time (around 50 seconds – 1 minute) than the average waffled not waffle, but still ended up being quicker than the 55 minutes it would have taken to bake the whole loaf.
THEY WERE DELICIOUS. The outside was firm and held up well, while the inside was warm, soft, and gooey! Any little banana chunks that I had missed when mashing up the banana also caramelized and made little sticky strings of banana-y goodness.
Banana Bread Recipe:
1 Egg with enough milk to make One Cup liquid
1 Stick butter/margarine (softened)
1 tsp Vanilla
1-1/2 Cup Flour
1 Cup Sugar
1 tsp Baking Soda
Hoping to try and tweak the recipe to be dad-friendly soon!
