I bought a 5 lb bag of potatoes from Aldi’s the other week (it was such a good deal!!) hoping to get lots of starchy use out of them.
Since then, though, the bag is only three potatoes lighter and taking up lots of space in the kitchen 😦
So, I took to the internet to find a recipe involving potatoes that looked fairly unique but also simple enough to handle – and found one from CopyKat 🙂
Unfortunately, I didn’t have all of the ingredients, or the correct type of pan for the roasting, or an oven that really indicated when it was hot enough…:P BUT the result wasn’t half bad! Honestly, they tasted like regular seasoned potato wedges with some nice citrusy flavor…aka delicious, so no complaints!

Greek(ish)-Style(ish) Roasted Potato Wedges:
Two Large Potatoes (Washed, unpeeled, cut in half then into wedges)
Salt and Pepper
3/4 C Water
1/3 C Olive Oil
2 tbsp Garlic Powder
1/4 C Lemon Juice
1) Prepare potatoes and place in pan – season as desired
2) Mix marinade (water, oil, juice, garlic) and pour over potatoes
3) Bake for 40 minutes at 450 F
4) Flip wedges over and bake for another 20-30 minutes
Oh, who am I kidding..I butchered this recipe!
Formal apology to anyone who has had real Greek Style Roasted Potatoes..my cookie sheet did its best!!
