Okokok I know I just did a nian gao post..BUT
YOU CAN WAFFLE IT!
Just fill it like you would – enough to cover all the ridges! Also be sure to spray! Pour in batter and close the lid for ~1 minute, or until you see steam coming out of the sides. The waffle will feel very soft but should hold shape when poked.
The waffle itself will come out pretty cleanly with a nice firm outside, but the inside will be the perfectly sticky consistency you are striving for!
